Method

Ingredients

  • 3 ripe bananas.

  • 3 tbsp avocado or coconut oil.

  • 1/2 cup coconut sugar (can add more if you like it sweet).

  • 1 flax egg (1tbsp spoon flax seed powder + 2.5 tbsp water)1/4 tsp Vanilla extract.

  • 1.5 cup Glutenfree flour.

  • 1/2 cup dairy free milk.

  • 2 tbsp almond butter.

  • 3/4 cup vegan chocolate chips.

  • 1/2 cup walnuts.

  • 1/2 tsp cinnamon powder ( optional).

  • 1 tsp baking powder.

  • 1/2 tsp baking soda.

  • Pinch salt.

Directions

  • preheat the oven to 375 degree F.

  • Grease the cake loaf pan and set it aside.

  • Make the flax egg by mixing 1 tbsp flax seed powder and 2.5tbsp water and let it sit for 10mins.

  • In a large mixing bowl, add the 3 peeled ripe bananas. Mash it well using a fork until no large chunks remain.

  • To this add all the wet ingredients, vanilla extract, dairy free milk, almond butter, flax egg and avocado/coconut oil. Mix well.

  • To this add coconut sugar and mix well.

  • In a separate bowl mix all the dry ingredients, gluten-free flour, baking powder, baking soda, cinnamon and salt. Mix well

  • Add the dry ingredients to the wet ingredients and fold in until well combined.

  • Gently fold in the walnuts and chocolate chips to the mixture.

  • Pour the mixture in the greased pan.

  • Add some chocolate chips and walnuts on the top.

  • Place the pan in the preheated oven for 45 to 55mins.

  • Once done, insert a toothpick in the middle of the loaf, if it comes out clean then it’s done.

  • Remove it from the oven and let it cool for 15mins, then carefully remove and place on a cooling rack and let it sit at room temperature till it’s completely cooled.
