Red Pepper Pesto

Ingredients

3 Red bell peppers.

Handful of basil leaves.

3 big garlic cloves.

1 tbsp lemon juice.

Olive oil 4 to 5 tbsp.

1/4 cup pine nuts/walnuts/almonds.

1 tbsp Vegan parmesan cheese/ nutritional yeast.

Salt.

Black pepper.
Directions

Roast the red bell peppers either in the oven or the gas stove.
-
Remove and discard the skin of the roasted bell peppers and transfer the peppers in a food processor.
-
Add all the remaining ingredients in the food processor except the olive oil and pulse.

Pour the olive oil through the opening/mouth of the food processor bit by bit, till you are happy with the consistency.
-
Check for the seasoning, pulse again. Enjoy this flavorful dip.
